This 9" skillet performs well. It is quite responsive to heat and fries like a dream. It is sturdier than cast iron and its bottom will forever stay flat. My only request for Demeyere would be to add a helper handle to that pan. It is as heavy as a cast iron pan and all good brands of cast iron skillets of this diameter and weight already have helper handles. It weighs 4 lbs even without food or liquids inside and it is simply not safe to lift it and move it without support of a helper handle on another side.

Solid like a rock. No rivets to clean because it's so well made. The little handle opposite the 'main' handle comes in really handy since it's so heavy. I'm fairly new to SS cooking, and we had a 'TV personality" brand pan which I practiced on that was just OK with heat retention. With this Demeyer, it's so good with heat retention, after I put the oil into the hot pan (which is after it passes the heated-up test with the rolling balls of water), I put my scrambled eggs in, and I immediately turn off the heat, and it has plenty of heat retention to fully cook the eggs. The only minor inconvenience is that it's definitely heavy to pick up when you pour or scoop out the eggs, or whatever food you have. Also, because it's 7-clad, it does take longer than most to heat this thing up! I usually turn it on medium, and really take my time getting all of my ingredients ready. This morning I put it on the heat, went outside to feed the grackles and clean their bird baths, came in, mixed the eggs, and it was heated up well. It's super easy to clean if you cook it properly. Every few cooks, I use the liquid bar keepers friend, which does a fantastic job of cleaning, yet won't damage the finish. Mine arrived with the packaging torn apart and just thrown into the box, so I don't know what happened. Luckily it didn't appear to be used, but I got a really good price so I didn't return it. Shipping was super fast.

I would highly recommend this pan. The negative: -the price (I dont mind spending 200€ for a quality pan that I will use for life, but for some people 200€ for a pan is too much - in that case maybe buy a cheaper quality pan, such as made in), -because it is thicker than most pans, it needs more time to heat up and cool down, -heavy (it is lighter than a cast iron pan, that is the same size but heavier than almost any other pan), -some people report that the handle broke off. I now own the pan for a few weeks and for now nothing happened. Positives: -30 years warranty, -it is thick, that means it holds the heat better than most others pans and therefor there is more room for error. Also the food stays warm in the pan for longer when you turn off the heat, -the feel and look of the pan is very premium, -no rivets, -7 ply, -the pan works really well on induction, -dishwasher and oven safe. It is a wonderful pan that I enjoy using every day. Stainless steel is king when it comes to cooking and people who give it a negative score because the food sticks should first learn how to cook before using stainless steel.

機能性の高いステンレスパンが欲しくて購入しました。 お肉がとても美味しく焼けます。ハンバーグもホットケーキもむら無く焼け、餃子は独特のちょっと揚げたようなカリカリさに。邪道かも知れませんが、大きさがちょうどよく揚げ鍋にもしています。 でも、デメリットもあります。 ①重い 重すぎて、私の腕では傾けて中身を皿に移動させるのにも一苦労。なので炒め物やパスタには使用しなくなりました。 ②余熱が必要 表面に水を垂らし、玉状になって走り回るまで熱しないと、くっつきます。大体2〜3分。 ③汚れを落とすのが大変 油がかなりこびりつくので、手入れはそれなりにしないといけません。 ④オリーブオイル原則使用不可 余熱後の高温ではサラダ油等不純物の少ないオイルしか使用できません。余熱後少し温度を下げてからならオリーブオイルやごま油も使えるのでは、と個人的には思うのですが、製品の説明書には不可と書かれていました。 でも、どのデメリットも製品の特徴上仕方がないものです。なので他のフライパンとも併用するのが望ましいです。うちでは安くて薄い鉄パンと一緒に使っており、そちらはもっぱら炒め物、パスタソース用です。

We have a good mix set of Atlantis/7ply series Demeyre pots and pans that purchased 4 years ago. They still look new. They all retain heat so well with next to no cold spots. They were expensive but they will not only last my life time but my kids and there kids. No complaints after 4 years of daily use. They are little heavy but that’s due to 7ply but much lighter than cast iron griddle we have. We cook eggs etc in these all the time with no food sticking if you pre heat the pan first on medium heat for few mins and pour a drop or two of water droplet to see if it dances around the pan (ready to cook) or evaporates (not ready so let it heat more). Nothing sticks on our Demeyre pans.
