Single or Double Wall?

The rim is a double wall, with the narrow drop center rim tape...10mm I believe. LBS thought I was crazy looking for tape that narrow.

Will they fit my 1985 27 inch schwinn bike

Yes that's what these are designed for. Almost all of the road wheels from the 60s 70s and 80s were 27 inch these are made to replace those.

You'd be much, much, much better off just buying an adapter. The adapters work perfectly, and are commonly used with tubeless tires to allow use of an air-compressor to inflate fast enough to seat the beads. Been there, done that. If there weren't a much simpler solution you might risk weakening an already narrow, weak rim, but when the fix is less than $2 it's ridiculous to risk face-planting at 20+ mph.
